About Mama Florence Cooking School

Mama Florence welcomes a wide variety of travelers, including couples, solo travelers, families, groups of friends, honeymooners, corporate teams, and multigenerational families visiting Florence from all over the world.

Many guests are passionate about food and wine and are looking for experiences that feel more personal and thoughtfully organized than standard tourist activities. Others simply want a memorable and enjoyable way to connect with Italian culture during their time in Tuscany.

The atmosphere at Mama Florence tends to attract travelers who appreciate quality ingredients, beautiful spaces, relaxed hospitality, meaningful cultural experiences, and a more human pace of travel. While complete beginners are absolutely welcome, many guests are also serious food lovers who value authenticity and culinary depth.

Yes. While Mama Florence is welcoming and accessible even for complete beginners, many guests are deeply passionate about food, wine, ingredients, and culinary culture. The experiences are designed not only to be enjoyable, but also to offer genuine insight into Italian cooking traditions, Tuscan ingredient philosophy, olive oil culture, wine pairings, and regional culinary identity.

Food lovers often appreciate the school’s attention to detail, professional kitchens, traditional recipes, seasonal ingredients, and relaxed but thoughtful approach to hospitality. Rather than focusing only on entertainment, Mama Florence tries to create experiences that feel rooted in real Italian food culture and everyday conviviality.

At the same time, the atmosphere remains approachable and informal rather than intimidating or overly technical, allowing guests with different levels of culinary knowledge to enjoy the experience together comfortably.

Mama Florence is located in the San Frediano neighborhood, one of Florence’s most authentic and historic areas, on the Oltrarno side of the city. The venue is within walking distance from Ponte Vecchio and many of Florence’s major attractions, while still maintaining a more local and residential atmosphere compared to the busiest tourist zones.

San Frediano is known for artisan workshops, traditional trattorias, local wine bars, and a strong connection to everyday Florentine life. Mama Florence chose this neighborhood specifically because it reflects many of the values behind the experience itself: craftsmanship, hospitality, creativity, and a slower relationship with food and culture.

The venue was created inside a former neighborhood grocery space and today combines professional kitchens, private dining areas, a wine cellar, and outdoor spaces designed for cooking classes and culinary gatherings.

Mama Florence is a professional cooking school and culinary venue located in Florence, Italy, specializing in traditional Tuscan and Italian food experiences. Founded with the idea of combining genuine hospitality, high-quality ingredients, and hands-on learning, Mama Florence offers cooking classes, private culinary events, market tours, wine tastings, and team building experiences for travelers from all over the world. Mama also organizes culinary travel weeks for foodies in some of Italy’s most iconic regions: Tuscany, Puglia, Sicily, Dolomites, Piemonte and more.

Unlike many entertainment-focused tourist activities, Mama Florence was created to offer a more thoughtful and immersive approach to Italian food culture. Experiences are built around real cooking techniques, carefully selected ingredients, wine culture, and the pleasure of preparing and sharing food together in a relaxed Florentine atmosphere.

Today, Mama Florence welcomes couples, families, solo travelers, food lovers, corporate groups, and private celebrations looking for a more culturally grounded and professionally organized culinary experience in Florence.

Mama Florence's story roots all the way back to 1890. Mama was in fact created by restoring what had originally been a well known neighborhood alimentari (traditional Italian grocery store) owned by the Abbarchini family.

The building was constructed during a fascinating period in Florence’s history, shortly after the unification of Italy, when the city was expanding beyond its medieval walls into what were then orchards, vineyards, and cultivated fields. Located in San Frediano, the old grocery became a reference point for local residents and travelers heading toward the Tuscan countryside, where horse-drawn carriages would often stop to purchase provisions before continuing their journey.

When the space was renovated, Vanessa Held took great care in preserving its history, and continuing the palce's food heritage and soul while transforming it in a cooking school. The original storefront sign still hangs above the entrance, while a later sign from the 1980s was recovered and displayed inside the venue.

Today, Mama Florence continues the building’s long tradition of hospitality. While food is now prepared rather than sold, the spirit remains surprisingly similar: bringing people together through food, wine, conversation, and the warmth of a Tuscan welcome.

Mama Florence has been welcoming guests since 2014 and is part of Le Baccanti Tours, a Florence-based hospitality and culinary travel company with more than 20 years of experience in food, wine, and cultural tourism in Italy.

Over the years, Mama Florence has grown from a small cooking school into one of Florence’s best-known culinary venues for travelers seeking genuine and high-quality food experiences. The school has hosted thousands of guests from all over the world, including couples, families, famous chefs, food writers, food enthusiasts, private celebrations, corporate groups and even celebrities!

The philosophy has remained consistent throughout the years: combining hospitality, quality ingredients, professional organization, and the convivial atmosphere traditionally associated with Italian dining culture.

Yes. Over the years, Mama Florence has welcomed a wide variety of guests from around the world, including food lovers, families, entrepreneurs, writers, journalists, athletes, television personalities, and public figures.

While we believe every guest deserves the same warm welcome and attention, our team have had the pleasure of hosting personalities such as Dustin Hoffman, Jessica Alba, members of the Obama family, Nobel Prize-winning author Mario Vargas Llosa, skating champion Ryan Boitano, Italian footballer Patrick Cutrone, and high caliber chefs such as Vito Mollica to name just a few.

For us, these visits are not important because of celebrity status, but because they reflect something we value deeply: people from very different backgrounds often connect through the universal language of food, wine, and hospitality.

Whether guests are internationally known or visiting Florence for the first time, our goal remains exactly the same — to offer an authentic Tuscan experience built around good food, genuine hospitality, and the pleasure of sharing time together.

Mama Florence focuses on quality, authenticity, and hospitality rather than high-volume tourism. While some cooking activities in Florence operate with very large groups or simplified formats, Mama Florence was designed to offer a more carefully curated culinary experience where guests can genuinely relax, cook, and enjoy the atmosphere.

The school combines well known professional chefs, premium Officine Gullo kitchens, carefully selected organic and local ingredients, seated dining, fine wine pairings, and a warm Florentine setting inspired by real Italian hospitality traditions. Experiences are intentionally designed to feel personal, immersive, and culturally meaningful rather than rushed or overly scripted.

Another important difference is the venue itself. Mama Florence operates in professionally designed kitchens in San Frediano, one of Florence’s most loved neighborhoods, and places strong emphasis on food culture, ingredient knowledge, storytelling, and the pleasure of sharing food and wine together.

For many guests, the experience becomes more than simply learning recipes. It often feels closer to being welcomed into an Italian culinary atmosphere where cooking, conversation, wine, and conviviality naturally come together.

Mama Florence was created as a real cooking school and professional culinary venue, not simply as an entertainment activity for tourists. While the experiences are designed to be welcoming and enjoyable even for complete beginners, the school places strong emphasis on authentic cooking techniques, ingredient quality, hospitality culture, and active participation.

Guests prepare recipes directly with the chefs, work with fresh ingredients, learn about Tuscan traditions, and enjoy a relaxed Italian meal together rather than simply watching demonstrations from a distance.

At the same time, Mama Florence also understands that travel should feel enjoyable and accessible. The goal is not to recreate a rigid culinary academy, but to offer memorable experiences rooted in real Italian hospitality and food culture.

The chefs at Mama Florence come from professional culinary backgrounds and are selected not only for their technical skills, but also for their ability to teach, communicate, and create a welcoming atmosphere for international guests.

All of the chefs have experience in fine or Michelin starred restaurants, catering, hospitality, and traditional Italian cooking, while also understanding how to guide beginners through hands-on culinary experiences in an engaging and approachable way. Classes are interactive and relaxed while still maintaining attention to technique, ingredient quality, and traditional preparation methods.

At Mama Florence, chefs are encouraged to share stories, cultural insights, cooking traditions, and practical culinary knowledge rather than simply following scripted demonstrations. This helps create a more personal and memorable experience for guests from different backgrounds and levels of experience.

La nostra scuola di cucina si trova nel cuore di Firenze, in Viale F. Petrarca 12, 50124 Firenze, a pochi passi dal centro storico. È facilmente raggiungibile a piedi, in taxi o con i mezzi pubblici.

Food Quality, Ingredients & Wine

Mama Florence places strong emphasis on ingredient quality because Italian cooking traditions are deeply rooted in the idea that simple recipes depend on excellent raw materials.

During the classes, guests work with fresh organic vegetables, herbs, flours, cheeses, olive oils, wines, eggs, seasonal produce, and other carefully selected ingredients inspired by Tuscan and Italian culinary traditions. Whenever possible, ingredients are sourced locally or from trusted Italian producers chosen for quality and flavor rather than mass-market convenience. A tasting of a high quality artisnal product is also offered in most classes.

The goal is not only to prepare recipes successfully, but also to help guests better understand why ingredient selection plays such an important role in Italian cuisine.

Yes. Mama Florence strongly believes that seasonality is one of the foundations of authentic Italian cooking.

Menus and ingredients often change throughout the year depending on availability, freshness, and the natural rhythms of Tuscan agriculture. In Italian culinary culture, cooking seasonally is not considered a modern trend but rather a traditional way of approaching food that has existed for generations.

Depending on the season, guests may encounter different vegetables, herbs, sauces, desserts, olive oils, or regional specialties naturally associated with a particular moment of the year in Tuscany.

Yes. Mama Florence actively incorporates just about only Tuscan and Italian products into its cooking experiences, both to support local producers and to give guests a more authentic understanding of regional food culture. Exeptions include spices, chocolate, coffee and other few things that cannot be sourced locally.

Depending on the class and season, guests may encounter Tuscan extra virgin olive oils, local wines, regional cheeses, artisanal flours, seasonal vegetables, fresh herbs, or ingredients tied specifically to Florence and the surrounding countryside.

The school believes food experiences become richer when travelers can better understand not only recipes, but also the territory, traditions, and people connected to the ingredients themselves.

The wines served during MaMa Florence experiences are hand-selected to elevate the dishes prepared during the class and to introduce guests to the rich heritage of Italian and Tuscan wine culture.

Depending on the experience, guests may enjoy premium selections such as a crisp Prosecco, a vibrant Vernaccia di San Gimignano DOCG, or a robust Chianti Classico DOCG such as Pizzolato, Azienda Fugnano, Castello di Fonterutoli, Badia a Coltibuono or Brunello Podere le Ripi. Every bottle is carefully chosen for its quality, balance, and pairing potential rather than simply for quantity.

At MaMa Florence, wine is approached as an essential pillar of Italian conviviality and hospitality, traditionally accompanying meals, conversation, and time shared together. To complete the experience, our chefs and team often share informal insights into Tuscan wine regions, specific grape varieties, and the art of food pairing.

Mama Florence focuses on creating balanced and authentic food and wine experiences rather than “unlimited alcohol” entertainment formats.

Wine is served generously with a brief introduction to three fine quality wines during all classes and is intended to complement the meal and convivial atmosphere. The philosophy is centered on quality, pairing, and hospitality not on scarce quality and excess consumption.

In traditional Italian culture, wine is typically experienced as part of the meal itself and closely connected to food, conversation, and social rhythm rather than separate entertainment, and wine is intended for moderate consumption.

Yes. Extra virgin olive oil  is considered a corner stone of Tuscan cuisine and is often discussed during Mama Florence experiences alongside broader aspects of regional food culture.

Depending on the class, guests may learn about olive oil production, tasting characteristics, Tuscan varieties, pairing principles, and the role olive oil plays in everyday Italian cooking traditions. Conversations often extend beyond recipes themselves to include broader topics such as Tuscan agriculture, seasonality, wine culture, and Italian ingredient philosophy.

The goal is to help guests better understand not only how Italians cook, but also why food occupies such an important place within Tuscan daily life.

Mama Florence places strong importance on seated dining because in Italian culture the shared meal is considered an essential part of hospitality, conversation, and conviviality rather than simply the final step of a cooking activity.

In some high-volume tourism experiences, guests may eat quickly standing at counters or in more functional setups designed mainly for rapid turnover. Mama Florence instead encourages guests to sit together, relax, enjoy wine pairings, and experience the slower rhythm traditionally associated with Italian meals.

The goal is not only to teach recipes, but also to recreate the atmosphere of gathering over food and wine that remains central to Tuscan and Italian dining culture.

Mama Florence was created with the belief that authentic hospitality and memorable culinary experiences depend on attention to detail, ingredient quality, atmosphere, and genuine interaction rather than maximum volume alone.

In Florence, some tourism activities operate on extremely high-turnover models designed primarily for speed and quantity. Mama Florence instead prioritizes carefully selected ingredients, professional kitchens, thoughtful service, wine pairings, authentic cooking techniques, and experiences that allow guests to slow down and genuinely enjoy the moment.

This philosophy influences every aspect of the experience, from the chefs and recipes to the dining style, pacing, and overall atmosphere guests encounter during their time at Mama Florence.

Italian cuisine is often based on relatively simple preparations, which means ingredient quality becomes extremely important.

In many traditional Italian dishes, there are very few elements hiding behind heavy sauces or complicated techniques. Because of this, freshness, seasonality, olive oil quality, flour texture, vegetables, cheese, wine, and balance naturally become central to the final result.

In Tuscany especially, cooking traditions are deeply connected to the idea that excellent ingredients should be respected rather than overly manipulated. This approach shapes not only recipes, but also shopping habits, family meals, markets, agriculture, and everyday Italian food culture.

At the same time teens love filming and sharing their experinece on social media as something different.

Florence, Tuscany & Food Travel

Visitors to Florence often discover that Tuscan cuisine is less about heavy complexity and more about high-quality ingredients prepared with balance and simplicity. Some of the foods most associated with Florence and Tuscany include fresh handmade pasta, ribollita, pappa al pomodoro, bistecca alla fiorentina, crostini, pecorino cheeses, cured meats, cantucci, gelato, seasonal vegetables, and traditional Tuscan breads.

Florence is also an excellent place to explore regional olive oils, Chianti wines, truffles, artisan pastries, fresh market ingredients, and the broader culture of Italian aperitivo and dining traditions.

For many travelers, however, the most memorable experiences come not only from specific dishes, but from understanding how food, wine, hospitality, and social life are interconnected within Tuscan culture.

The best food experiences in Florence are usually the ones that allow travelers to connect directly with local culture, ingredients, hospitality, and human interaction rather than simply consuming food passively.

For many visitors, experiences such as cooking classes, market tours, wine tastings, artisan food visits, and long meals shared around the table become especially meaningful because they offer insight into how Italians actually live, cook, gather, and celebrate food culture.

Florence offers an enormous variety of culinary experiences, ranging from simple street food to highly curated gastronomic experiences. Travelers often find the most rewarding experiences are those that combine authenticity, storytelling, quality ingredients, convivial atmosphere, and meaningful personal interaction.

Italian cuisine is highly regional, and Tuscan cooking is distinct for its strong emphasis on simplicity, rustic elegance, seasonal ingredients, olive oil, grilled meats, legumes, bread traditions, and ingredient purity.

Compared to some other Italian regions, Tuscan cuisine often uses fewer ingredients per dish and relies heavily on the natural flavor of excellent raw materials rather than elaborate sauces or heavy seasoning. Bread, olive oil, beans, vegetables, herbs, wines, and carefully prepared meats play central roles in many traditional recipes.

At the same time, Tuscany itself contains many local variations between Florence, Siena, Chianti, the coast, rural villages, and mountain areas, each with its own culinary identity and traditions.

Tuscany is internationally famous for food and wine because of its extraordinary combination of agricultural diversity, historical culinary traditions, wine culture, artisan production, and strong connection between food and territory.

The region produces some of Italy’s most recognized wines, olive oils, cheeses, cured meats, legumes, vegetables, breads, and seasonal specialties. Tuscan cuisine also reflects a philosophy that values simplicity, seasonality, craftsmanship, and respect for ingredients rather than excessive complexity.

Equally important is the Tuscan lifestyle itself, where meals are traditionally connected to family, hospitality, conversation, landscape, and rhythm of life. For many travelers, Tuscany represents not only a culinary destination, but also an idealized vision of food culture rooted in authenticity and human connection.

General

Cooking experiences in Florence can vary enormously in style and atmosphere. Some are designed mainly as fast-paced tourist entertainment focused on volume, simplified preparation, quick demonstrations, or standardized experiences. Others, including Mama Florence, are structured more as genuine culinary experiences where hospitality, ingredient quality, participation, and atmosphere are considered central parts of the experience itself.

A professional cooking school environment does not necessarily mean a rigid culinary academy for chefs, but rather a space where cooking is approached thoughtfully and with respect for ingredients, organization, and guest experience. At Mama Florence, this includes professional kitchens, experienced chefs, real cooking techniques, seated meals, wine culture, and enough time for guests to genuinely enjoy the rhythm of the experience.

The goal is not simply to complete an activity, but to help guests experience the pleasure of cooking, eating, learning, and spending time together in a way that feels connected to genuine Tuscan hospitality traditions.

Travelers should look beyond marketing photos and low prices when choosing a cooking class in Florence. Some experiences are designed mainly around speed, volume, and tourist turnover rather than genuine culinary quality or authentic hospitality.

Important aspects to evaluate include whether the experience is truly hands-on, the size of the groups, the professionalism of the chefs, ingredient quality, kitchen environment, dining atmosphere, and overall organization.

For many travelers, the best experiences are those that combine genuine hospitality, quality ingredients, cultural storytelling, professional kitchens, and the opportunity to genuinely enjoy the experience at a comfortable pace.

Price differences between cooking classes in Florence often reflect major differences in group size, staffing, ingredient quality, venue standards, wine service, operational structure, and overall experience design.

Lower-cost experiences may operate with very large groups, simplified menus, shorter formats, reduced interaction, or highly optimized tourist turnover models designed primarily around volume. More curated experiences generally invest more heavily in professional chefs, premium kitchens, carefully selected ingredients, seated dining, wine pairings, hospitality, and a more relaxed atmosphere overall.

For many travelers, the value of a cooking class is not simply the number of recipes prepared, but the overall quality of the culinary and cultural experience created during the time spent together.

Tips are never required, but they are always appreciated when guests feel they have received excellent service and hospitality.

At Mama Florence, the focus is on creating authentic and welcoming experiences rather than transactional service dynamics. Many guests choose to leave gratuities voluntarily as a gesture of appreciation toward the chefs, assistants, and staff who contributed to the experience.

As in much of Italy, tipping culture exists but is generally more moderate and discretionary than in some other countries.

Cooking Classes at MaMa Florence

Yes. Mama Florence classes are designed to be truly hands-on experiences where guests actively cook rather than simply observe.

Participants prepare doughs, shape pasta, work on sauces, assemble recipes, and interact directly with the ingredients under the guidance of professional chefs. The atmosphere is interactive, relaxed, and welcoming, allowing guests to feel comfortable participating regardless of previous cooking experience.

Even guests who do not usually cook often discover that preparing food together becomes one of the most enjoyable and engaging parts of their trip to Italy.

Most Mama Florence cooking classes last approximately three to four hours depending on the format and menu.

This timing allows guests to enjoy the experience at a comfortable pace without feeling rushed. Classes generally include introductions, hands-on cooking, culinary guidance from the chefs, wine service, and the seated meal itself.

Some specialized experiences, such as market tours or private events, may last longer depending on the program and level of customization.

Mama Florence offers a variety of culinary experiences inspired by Tuscan and Italian traditions.

Popular experiences include fresh pasta classes, pizza and gelato classes, Tuscan cooking classes, market tours combined with cooking experiences, private culinary events, gluten free experiences, wine-focused experiences, and corporate team building programs.

Some classes focus on specific techniques such as handmade pasta or pizza dough preparation, while others offer broader multi-course Tuscan menus including appetizers, sauces, desserts, and regional specialties.

Experiences are available in both small group and private formats, allowing guests to choose the atmosphere and level of personalization that best fits their travel style.

A pasta class is usually focused specifically on fresh handmade pasta techniques such as tagliatelle, ravioli, tortelli, gnocchi, sauces, and dough preparation. These experiences are ideal for guests who want to explore Italian pasta making in greater depth.

A Tuscan Cooking Class generally offers a broader culinary experience that may include appetizers, fresh pasta, sauces, meat main courses, desserts and traditional regional dishes connected to Tuscan food culture.

Both experiences are hands-on and rooted in every day Italian cooking traditions, but they offer slightly different rhythms and culinary focus depending on the guest’s interests.

Yes. Mama Florence classes are designed to be accessible and enjoyable even for guests with little or no cooking experience.

The chefs guide participants step by step in a relaxed and supportive environment, helping beginners feel comfortable while still teaching traditional techniques and preparation methods. Many guests join specifically because they want to experience Italian cooking culture without needing advanced culinary skills.

The atmosphere is intentionally welcoming rather than intimidating, making the classes enjoyable for both confident cooks and complete beginners.

Yes. Many experienced home cooks, food enthusiasts, hospitality professionals, and culinary travelers also enjoy the classes because of the focus on authentic techniques, ingredient quality, regional traditions, and Italian food culture.

Experienced guests often appreciate the opportunity to better understand Tuscan ingredient philosophy, fresh pasta textures, olive oil culture, wine pairings, and the simplicity-focused approach that defines much of Italian cuisine.

The atmosphere remains relaxed and approachable rather than overly technical, but the experiences still offer meaningful culinary depth for guests who are genuinely passionate about food and wine.

Mama Florence cooking classes include hands-on cooking instruction, professional chef guidance, ingredients, equipment, aprons, wine pairings, the seated meal, and the recipes prepared during the class.

Depending on the experience selected, classes may also include market tours, olive oil and balsamic vinegar tastings, dessert preparation, food storytelling, or private dining elements.

The goal is to create complete culinary experiences rather than simple cooking demonstrations, combining food, hospitality, culture, wine, and convivial dining into a single experience.

Yes. Many Mama Florence experiences include carefully selected Italian wine pairings served during the meal.

Depending on the class, guests will enjoy high-quality, hand-selected bottles ranging from crisp sparkling prosecco and vibrant whites to prestigious Chianti and other regional Italian DOCG selections. Each is thoughtfully curated by our team to perfectly complement the specific flavor profiles of the dishes prepared. At MaMa Florence, we approach wine not merely as a beverage service, but as an essential, high-quality component of the authentic Italian dining experience.

The atmosphere is intended to feel relaxed and convivial, similar to the rhythm of a long Italian meal shared among friends.

The number of participants depends on the specific class format, season, and whether the experience is private or shared.

Small group classes are intentionally designed to remain interactive and manageable, allowing guests to participate actively and interact comfortably with both the chefs and fellow travelers. Private experiences can range from intimate couples experiences to larger family gatherings and corporate events.

Mama Florence places strong importance on maintaining an atmosphere where guests can cook, ask questions, and enjoy the experience without feeling anonymous within an excessively large crowd.

Mama Florence was created to offer a more personal and welcoming atmosphere compared to highly industrialized tourism models. While some classes may include lively international groups, the school focuses on maintaining experiences that feel interactive, social, and comfortably organized rather than overcrowded or rushed.

The venue itself is structured around multiple professional kitchens and dining spaces, helping create a more relaxed environment even during busy periods.

Many guests specifically choose Mama Florence because they are looking for a more thoughtful and genuine alternative to very large-scale cooking activities.

Yes. Mama Florence classes are conducted primarily in English to accommodate the international nature of the guests visiting Florence from around the world.

The chefs and staff are experienced in working with international travelers and aim to communicate clearly and naturally regardless of guests’ cooking backgrounds or native languages. Some team members may also speak additional languages depending on the day and the event.

The atmosphere is intentionally informal and welcoming, helping guests feel comfortable asking questions and participating throughout the experience.

Absolutely. Solo travelers are very welcome at Mama Florence and often find cooking classes to be one of the best ways to meet people while traveling in Florence.

The social nature of cooking together, sharing a meal, and interacting around the table creates a relaxed atmosphere where guests from different countries and backgrounds naturally connect with one another.

Many solo travelers appreciate the balance between cultural experience, social interaction, and true food exploration that cooking classes can offer during a stay in Tuscany.

For many travelers, a cooking class becomes one of the most memorable parts of visiting Florence because it offers a direct and personal connection to Italian culture through food, wine, hospitality, and shared experience.

Unlike traditional sightseeing alone, cooking experiences allow guests to actively participate, learn practical skills, understand local traditions, and spend meaningful time in a convivial setting.

Many visitors discover that Italian cuisine is not only about recipes, but also about ingredients, simplicity, atmosphere, and the pleasure of gathering around food and wine together.

Eventi privati e gruppi

Yes. Private classes can work very well for families traveling with young children because they allow for a more personalized rhythm and atmosphere.

Depending on the family’s interests and the children’s ages, activities can often focus on preparations that tend to be more engaging for younger guests, such as pizza, gelato, cookies, or fresh pasta making.

While Mama Florence remains a professional culinary environment rather than a children’s entertainment venue, private experiences are often an excellent option for families looking to share a memorable and authentic food experience together while traveling in Florence.

Our private classes are perfect for any group size! We host intimate private classes for individuals or couples (2 guests) all the way up to large corporate team-building events or family reunions of 40+ guests.

A typical private class lasts about 3 to 3.5 hours. This includes the hands-on cooking session followed by a relaxed, seated lunch or dinner where you enjoy the fruits of your labor paired with excellent wine.

Yes! Private classes are a fantastic experience for families. Children of all ages love getting their hands dirty making fresh pasta or pizza. We can easily adjust the kitchen setup and recipes to keep younger chefs engaged and safe.

Diete, allergie e ingredienti

In many cases, yes. Mama Florence regularly welcomes guests with dietary restrictions and food preferences, including vegetarian, gluten free, dairy free, and other dietary needs whenever reasonably possible within the structure of the selected experience.

Because classes are based on real cooking activities prepared in professional kitchens, accommodations depend on factors such as the specific class format, group size, menu complexity, and the nature of the dietary restriction itself.

Guests are always encouraged to communicate dietary needs clearly in advance so the experience can be evaluated and organized appropriately.

Yes. Vegetarian guests can usually be accommodated in many Mama Florence experiences with advance notice.

Italian and Tuscan cuisine naturally include a wide variety of vegetable-based dishes, fresh pasta preparations, sauces, seasonal ingredients, cheeses, and desserts that work well within vegetarian cooking traditions.

Depending on the class structure and menu, the chefs may adapt certain recipes or prepare alternative ingredients to maintain a balanced and enjoyable culinary experience for vegetarian participants.

Some vegan accommodations may be possible depending on the specific class and menu structure, but not all Mama Florence experiences are ideally suited for fully vegan adaptations.

Traditional Tuscan and Italian cooking often relies heavily on ingredients such as eggs, cheeses, butter, and other animal-derived products, especially in fresh pasta and dessert preparations.

For this reason, vegan requests generally require advance evaluation and may work better in private experiences where menus can be adapted more flexibly.

Yes, in many cases gluten free guests can participate at Mama Florence, particularly with advance notice and depending on the selected experience. MaMa Florenec actaully offer Gluten Free Cooking Classes.

Mama Florence has experience organizing gluten free adaptations and private gluten free cooking classes, especially for guests who are passionate about Italian food culture but need to avoid gluten.

At the same time, because Mama Florence operates as a real cooking school with fresh flour, shared kitchens, and hands-on culinary activities, gluten free participation always requires careful evaluation and clear communication in advance.

Mama Florence takes food allergies seriously and makes reasonable efforts to accommodate guests whenever possible.

Dietary information communicated in advance is shared with the chefs and operational team so that ingredients, menus, and preparation processes can be evaluated carefully before the experience takes place.

However, because classes are conducted in active professional kitchens where multiple ingredients are handled simultaneously, absolute allergen-free environments cannot be guaranteed.

No. While Mama Florence makes careful operational efforts to reduce the risk of cross contamination whenever possible, the kitchens are not sterile allergen-free laboratory environments and absolute absence of cross contamination can never be fully guaranteed.

This is especially important in a cooking school environment where flour, nuts, dairy, eggs, and other allergens may be present depending on the class taking place.

Guests with severe allergies or medical conditions requiring strict avoidance are strongly encouraged to communicate directly with the team before booking.

Yes. Private gluten free experiences can often be organized and are generally the best option for guests requiring greater dietary control or menu customization.

Private classes allow the chefs and operational team to structure the experience more carefully around the guest’s dietary needs while also offering greater flexibility in ingredient selection and pacing.

Because gluten free cooking in a traditional Italian culinary environment requires careful planning and operational organization, advance notice is always necessary.

Advance dietary communication is extremely important because Mama Florence experiences are carefully organized around ingredients, menus, staffing, kitchen setup, and group logistics.

Unlike restaurants with large à la carte menus, cooking classes involve coordinated preparation and shared activities. Last-minute dietary requests may therefore be difficult or impossible to accommodate properly.

Providing dietary information early allows the chefs and staff to prepare appropriately and create the best possible experience for both the guest and the group.

Yes. We believe a meal without wine is just breakfast! Every class includes a curated selection of local Tuscan wines specifically paired to your menu, as well as water and soft drinks.

We prioritize locally sourced and seasonal ingredients. Many of our vegetables and meats come directly from local markets, and our olive oil and flour are selected from premium Tuscan producers.

Prenotazioni e cancellazioni

Mama Florence strongly recommends booking as early as possible, especially during the busiest travel seasons in Florence such as spring, summer, holidays, and early autumn.

Many experiences operate with limited capacity in order to maintain a comfortable and high-quality atmosphere, and certain dates can fill quickly weeks or even months in advance. Private classes, family gatherings, and corporate events generally require even earlier planning because they involve dedicated kitchens, staffing, and customized organization.

While occasional last-minute availability may exist, guests hoping to secure specific dates or preferred experiences are encouraged not to wait until the final days of their trip.

Yes. Many Mama Florence experiences regularly sell out, particularly during high season and on weekends.

Because the school prioritizes experience quality, hands-on interaction, and operational organization, availability can become limited relatively quickly. Certain experiences, especially private events, gluten free experiences, and larger group bookings, may have particularly restricted availability.

For travelers visiting Florence during peak periods, advance booking is strongly recommended.

Sometimes, yes, depending on operational timing, staffing, ingredient preparation, and remaining availability. However, Mama Florence classes are carefully organized in advance, and last-minute requests cannot always be accommodated.

Cooking experiences require preparation of ingredients, kitchen scheduling, staffing coordination, and operational planning before guests arrive. During busy periods, availability may also change rapidly throughout the day.

Guests interested in booking close to the experience date are encouraged to contact the team directly to verify current availability and possible options.

Availability at Mama Florence can change quickly because the experiences operate with limited kitchen capacity, scheduled staffing, and carefully planned culinary organization rather than unlimited tourism volume.

Private events, corporate groups, family gatherings, and larger bookings may reserve entire kitchens or multiple spaces at once, significantly affecting availability for other guests. Florence is also a highly seasonal destination where demand for food and wine experiences can fluctuate rapidly.

For this reason, experiences that appear available one day may become fully booked shortly afterward, especially during high season periods.

Cancellation policies vary depending on the type of experience, notice period, group size, and whether the booking is private or shared. Because cooking classes involve advance ingredient purchasing, staffing, kitchen preparation, and operational planning, cancellations can have a significant impact on organization and availability.

Private events generally involve more restrictive conditions because dedicated spaces, chefs, and operational resources are reserved specifically for the booking. Shared group experiences may have different flexibility depending on timing and booking conditions.

Guests are always encouraged to review the specific cancellation terms associated with their booking carefully before confirming the reservation.

Private experiences require significantly more operational commitment than shared group classes. When a private event is confirmed, Mama Florence reserves dedicated kitchens, chefs, staff, dining areas, and time slots specifically for that group, often blocking availability that could otherwise remain open to multiple bookings.

In a professional culinary environment with limited kitchen spaces, last-minute cancellations or major changes can create important logistical and financial challenges. For this reason, private experiences generally operate under stricter booking and cancellation conditions.

The goal is not to create rigidity, but to ensure that private experiences can maintain the high level of organization, hospitality, and quality guests expect.

In some cases, yes, depending on operational timing, availability, and the nature of the requested change. Minor adjustments may sometimes be possible if communicated sufficiently in advance.

However, because cooking experiences involve staffing, ingredient preparation, kitchen scheduling, and group organization, not all modifications can be guaranteed, especially close to the experience date or during busy periods.

Guests are encouraged to communicate any potential changes as early as possible so the team can evaluate the available options realistically and transparently.

Guests are encouraged to arrive on time whenever possible in order to fully enjoy the experience and avoid disrupting the rhythm of the class for the group and chefs.

Because cooking classes follow structured preparation timelines, significant delays may affect participation in certain parts of the experience. Depending on operational circumstances, late arrivals may not always be able to recover missed preparation stages once the class has begun.

If guests anticipate delays, contacting the team as early as possible is always appreciated so that the situation can be managed as smoothly as possible.

Sustainability, Quality & Philosophy

Mama Florence believes that tourism should create meaningful cultural exchange while respecting local communities, traditions, neighborhoods, and food culture. The school aims to offer experiences that feel connected to the real rhythm of Florence rather than highly industrialized tourism models focused purely on volume.

Part of this approach includes working with local culinary traditions, supporting Italian and Tuscan producers whenever possible, encouraging slower and more immersive travel experiences, and maintaining a human scale within the experiences themselves.

For Mama Florence, sustainability is not only an environmental concept, but also a cultural and social one connected to preserving authenticity, craftsmanship, hospitality, and meaningful human interaction within the city of Florence.

Mama Florence was created with the idea that authentic hospitality and meaningful food experiences become difficult to maintain when experiences are designed purely around maximum volume and rapid tourist turnover.

In Florence, some tourism activities operate with extremely large groups, simplified formats, rushed timing, or highly repetitive experiences optimized primarily for scale. Mama Florence instead focuses on creating experiences that feel more personal, interactive, relaxed, and culturally grounded.

This philosophy influences decisions related to kitchen organization, group atmosphere, ingredient quality, dining style, staffing, wine service, and overall pacing. The goal is to create experiences where guests can genuinely connect with the food, the people, and the atmosphere rather than simply moving through a standardized tourist activity.

At Mama Florence, cooking is viewed not only as a technical activity, but as a social and cultural experience built around sharing time together. Italian food culture has historically been deeply connected to conversation, hospitality, family life, conviviality, and gathering around the table.

For this reason, Mama Florence places strong emphasis on interaction between guests, chefs, staff, and fellow travelers rather than creating purely transactional or performance-based experiences. Cooking together naturally encourages collaboration, storytelling, laughter, cultural exchange, and shared memories in a way that many traditional tourist activities do not.

For many guests, the emotional and human atmosphere surrounding the meal becomes just as important as the recipes themselves.

Whenever possible, Mama Florence works with Tuscan and Italian producers, ingredients, wines, and artisan food traditions connected to the local territory and broader Italian culinary culture.

The school strongly believes that food experiences become richer and more meaningful when guests can better understand where ingredients come from, how they are produced, and why certain products are culturally important within Tuscany and Italy.

Depending on the season and experience, guests may encounter local olive oils, wines, cheeses, vegetables, artisanal ingredients, and products tied to Tuscan agricultural and culinary traditions.

Italian cuisine is often based on relatively simple preparations, which means the quality of the ingredients becomes especially important. In many traditional Italian dishes, there are few elements to hide imperfections, so flavor, freshness, seasonality, texture, and balance play a central role.

Tuscan cooking in particular is strongly connected to the idea that excellent ingredients require respect rather than excessive manipulation. Olive oil, vegetables, bread, wine, cheese, flour, herbs, and seasonal products are often allowed to speak for themselves through simple but carefully executed recipes.

For Mama Florence, focusing on quality is therefore not simply a luxury choice, but a fundamental part of understanding authentic Italian food culture and hospitality traditions.
