What Is Crema Gelato with Red Berry Sauce?

Crema gelato - also called gelato alla crema or gelato di crema - is a classic Italian gelato made from a custard-style base of egg yolks, sugar, milk, cream, and vanilla.

In this version, the finished gelato is served with a simple strawberry sauce. The contrast works beautifully: the crema is soft, rich, and gently scented with vanilla, while the strawberries bring freshness, fruit, and a little acidity to each spoonful.

How to Make Crema Gelato

Crema Gelato Ingredients:

• 4 egg yolks • 110 g sugar • 250 g milk • 250 g whipping cream • 1 vanilla pod (or vanilla flavouring)

Mama’s Secret: Crema gelato has very few ingredients, so quality matters. Use the best milk, cream, eggs, and vanilla you can find, and give the base time to chill completely before churning.

1. Prepare the Crema Base

  • Separate the egg yolks from the egg whites.
  • In a bowl, beat the egg yolks with the sugar until frothy. 
  • Split the vanilla pod and scrape in the seeds (or add a drop of vanilla flavouring) and add the milk and cream a little at a time, stirring as you go.
  • Heat the mixture over low heat until it reaches 85-90°C, just before boiling.

2. Chill

  • Remove the mixture from the heat, whisking until well combined.
  • Place the gelato base in the refrigerator for about 1 hour, until thoroughly chilled.

How to Make Red Berry Sauce for Crema Gelato

Red Berry Sauce Ingredients:

• 300 g fresh strawberries • 80 g granulated sugar • 50 ml water • 50 g dark chocolate, optional

1. Prepare the Red Berry Sauce

  • Wash the strawberries, remove the hulls, and roughly chop the fruit.
  • Place the sugar in a small saucepan over low heat and allow it to begin caramelizing gently, taking care not to let it burn.
  • Add the strawberries and water, then cook gently until the fruit softens and begins to form a loose sauce.
  • Remove from the heat and allow the strawberry sauce to cool before serving it with the gelato.
  • Optional: finish the dessert with a little grated or chopped dark chocolate.

How to Serve Crema Gelato with Red Berry Sauce

  1. Scoop the crema gelato into small bowls or cups and spoon the cooled strawberry sauce over the top.
  2. Finish with dark chocolate if desired and serve immediately.

The Perfect Bite

The first spoonful is all crema: smooth, dense, softly custardy, with vanilla sitting quietly behind the milk and cream. Then the strawberry arrives - brighter, fruitier, and just acidic enough to cut through the richness of the gelato. If you add dark chocolate, it brings a slightly bitter finish that makes both the vanilla and berries taste deeper. It is a simple combination, but every part has a reason to be there.

Crema Gelato with Strawberry Sauce vs Classic Crema Gelato

The gelato base is the same classic crema gelato made with egg yolks, milk, cream, sugar, and vanilla.
