Crema gelato - also called gelato alla crema or gelato di crema - is a classic Italian gelato made from a custard-style base of egg yolks, sugar, milk, cream, and vanilla.
In this version, the finished gelato is served with a simple strawberry sauce. The contrast works beautifully: the crema is soft, rich, and gently scented with vanilla, while the strawberries bring freshness, fruit, and a little acidity to each spoonful.
Crema Gelato Ingredients:
• 4 egg yolks • 110 g sugar • 250 g milk • 250 g whipping cream • 1 vanilla pod (or vanilla flavouring)
Mama’s Secret: Crema gelato has very few ingredients, so quality matters. Use the best milk, cream, eggs, and vanilla you can find, and give the base time to chill completely before churning.

• 300 g fresh strawberries • 80 g granulated sugar • 50 ml water • 50 g dark chocolate, optional
1. Prepare the Red Berry Sauce
The first spoonful is all crema: smooth, dense, softly custardy, with vanilla sitting quietly behind the milk and cream. Then the strawberry arrives - brighter, fruitier, and just acidic enough to cut through the richness of the gelato. If you add dark chocolate, it brings a slightly bitter finish that makes both the vanilla and berries taste deeper. It is a simple combination, but every part has a reason to be there.
The gelato base is the same classic crema gelato made with egg yolks, milk, cream, sugar, and vanilla.
The difference is the finish. Our classic Crema Gelato recipe lets the custard and vanilla stand completely on their own, while this version adds strawberries for a fresher, fruit-forward contrast.
