Sorbet Base:
Water — 600 g
Fresh lemon juice (strained) — 280 g
Granulated sugar — 220 g
Zest of 2 organic lemons (Sorrento or Amalfi preferred)
Italian Meringue:
Fresh egg whites — 50 g
Granulated sugar — 100 g
Water — 35 g
The Base
Heat & Dissolve: In a small saucepan, combine the water and sugar. Heat the mixture to 85°C while stirring gently. Keep it at this temperature for exactly 1 minute to ensure the sugar is completely dissolved.
Infuse: Remove the saucepan from the heat and stir in the fresh lemon zest. Cover the pan with a lid and let it steep for 15 minutes to release all those beautiful aromatic citrus oils.
Chill Fast: Cool the mixture down rapidly by placing the pan into an ice bath until it reaches 4°C.
Strain & Mix: Strain the chilled syrup through a fine mesh sieve to remove the zest, then stir in your cold, freshly squeezed lemon juice.
Let it Rest (Aging): For the best results, let the base rest in the fridge for 2 to 3 hours at 4°C. Pour the sugar syrup in a slow, steady stream into the whipping egg whites. Continue whipping until you get a glossy, stiff, and lukewarm meringue.
Churning & Service
Blend the liquid base with an immersion blender.
Gently fold the meringue into the base using a rubber spatula moving from bottom to top.
Churn and extract at –7°C to –8°C — when the gelato paddle leaves a sharp, clean track and the texture looks semi-glossy/opaque.
Transfer to a container or directly into service pans.
Ideal Serving Temperature: –10°C to –11°C.
