What Is Crema Gelato?

Crema gelato - also called gelato alla crema or gelato di crema - is a classic Italian gelato made from a custard-style base of egg yolks, sugar, milk, cream, and vanilla. It is richer than a milk-only gelato, but still delicate enough for the dairy and vanilla to remain clear and balanced.

How to Make Crema Gelato

Crema Gelato Ingredients:

• 4 egg yolks • 110 g sugar • 250 g milk • 250 g whipping cream • 1 vanilla pod (or vanilla flavouring)

Mama’s Secret: Crema gelato has very few ingredients, so quality matters. Use the best milk, cream, eggs, and vanilla you can find, and give the base time to chill completely before churning.

1. Prepare the Crema Base

  • Separate the egg yolks from the egg whites.
  • In a bowl, beat the egg yolks with the sugar until frothy. 
  • Split the vanilla pod and scrape in the seeds (or add a drop of vanilla flavouring) and add the milk and cream a little at a time, stirring as you go.
  • Heat the mixture over low heat until it reaches 85-90°C, just before boiling.

2. Chill

  • Remove the mixture from the heat, whisking until well combined.
  • Place the gelato base in the refrigerator for about 1 hour, until thoroughly chilled.

How to Churn Crema Gelato

  1. Pour the thoroughly chilled mixture into your gelato machine.
  2. Churn for about 30 minutes, or until the gelato is smooth and creamy.

  1. Serve once the gelato is smooth, creamy, and ready to scoop.

The Perfect Bite

The first spoonful should be smooth and dense, with the soft richness of egg yolk followed by fresh milk and cream. Then comes the vanilla: warm, fragrant, and gentle rather than overpowering. A good crema gelato is rich without feeling heavy, with a clean finish that makes another spoonful very easy to justify.
