Fresh Pasta Dough Ingredients

• 200 gr all-purpose flour • 200 gr semola flour • 4 medium eggs

Potato Filling Ingredients

• 400 gr potatoes • 20 gr Parmesan cheese • 20 gr butter • 1 tuft parsley, finely chopped • 1/2 garlic clove, crushed to a fine paste • 1 small teaspoon tomato paste • Salt, to taste • Black pepper, to taste

• 300 gr asparagus • 2 tablespoons extra virgin olive oil • 20 gr butter • 1 garlic clove • Salt, to taste • Black pepper, to taste

Mama’s Secret: When shaping the tortelli, press out as much air as possible before sealing. Trapped air can make filled pasta open or burst while cooking.

How to Make the Fresh Pasta Dough

  1. Combine the all-purpose flour and semola flour with the eggs in a medium bowl.
  2. Knead until the dough becomes smooth, soft, elastic, and compact enough to hold its shape when formed into a ball.
  3. Continue kneading on a lightly floured work surface using the palm of your hand.
  4. Shape the dough into a ball, cover with plastic wrap, and leave it to rest at room temperature for at least 30 minutes.

How to Make the Potato Filling

  1. Boil the potatoes in salted water until tender.
  2. Peel them, mash them into a bowl, and add the Parmesan, butter, finely chopped parsley, crushed garlic, tomato paste, salt, and pepper.
  3. Mix until the filling is uniform and well combined.
  4. The filling should be soft but cohesive enough to sit neatly inside the pasta without spreading.

How to Shape the Tortelli

  1. Remove the plastic wrap and shape the dough into a rectangle roughly the width of your pasta machine.
  2. Roll the dough through the machine, dusting generously with semola to prevent sticking. Continue reducing the thickness with each pass until you have a thin pasta sheet.
  3. Lay the sheet on a semola-dusted work surface and cut out individual rounds with a round pasta cutter.
  4. Brush each round lightly with water.
  5. Place a small teaspoon of filling slightly off-center, then fold the larger side of the pasta over the filling.
  6. Press gently around the filling to remove as much air as possible, then seal the edges firmly.
  7. Join the two ends together to create the tortelli shape.
  8. Place the finished tortelli on a tray dusted with semola until ready to cook.

How to Make Asparagus Sauce

  1. Wash the asparagus carefully and slice it into rounds approximately 1 mm thick.
  2. Discard the hardest, whitest part of the stalk.
  3. Heat the garlic clove with the extra virgin olive oil in a frying pan for about 1 minute.
  4. Add the asparagus and salt and cook over medium heat for about 15 minutes, adding small amounts of water whenever needed to keep the asparagus moist.
  5. Once cooked, season with salt and pepper, add the butter, and blend until smooth.

How to Finish the Tortelli

  1. Cook the tortelli in salted boiling water for 2–3 minutes.
  2. Meanwhile, warm the asparagus sauce in a pan with a couple of tablespoons of pasta cooking water.
  3. Drain the tortelli and transfer them directly to the sauce.
  4. Toss gently for about 1 minute, adding grated Parmesan if desired.
  5. Serve piping hot.

Why Asparagus Works So Well with Potato Tortelli

Potato filling has warmth and softness, but very little sharpness of its own. That gives the sauce room to bring contrast. Asparagus adds something greener and fresher, while butter rounds out its more vegetal edge. The garlic stays in the background, and the pasta water helps loosen the sauce enough to coat the tortelli without burying them. It is a good example of why filled pasta does not always need a heavy sauce. The filling already carries plenty of comfort; the asparagus brings the lift.
