Italian Eggplant & Potato Vegetarian Meatballs

Ingredients

  • 1 medium Eggplant (approx. 300 g)
  • 1 large Potato (approx. 200 g)
  • 40 g Pecorino Romano, finely grated
  • 1 Egg Yolk
  • Grated zest of 1/4 organic Lemon
  • 4–5 fresh Mint leaves (or parsley), finely chopped
  • Breadcrumbs (as needed for binding and coating)
  • 1/2 Garlic clove, finely minced (optional)
  • Salt and Black Pepper, to taste
  • Extra Virgin Olive Oil, as needed

Preparation

1. Cook and Mash the Potato

Wash the potato thoroughly and boil it whole (skin-on) in salted water until fork-tender. Once cooked, peel it carefully while warm and immediately mash it with a potato ricer into a large mixing bowl.

2. Sauté the Eggplant

While the potato is boiling, cut the eggplant into small, uniform cubes. Sauté in a skillet over medium heat with a generous drizzle of Extra Virgin Olive Oil, garlic, and a pinch of salt. Cook until the eggplant is soft and moisture has evaporated. Combine with the mashed potatoes and let the mixture cool.

3. Prepare the Mixture

To the potato and eggplant mixture, add the grated Pecorino Romano, lemon zest, chopped mint, egg yolk, salt, and black pepper. Mix well to form a homogeneous dough. Tip: If the mixture feels too wet to shape, stir in 1 to 2 tablespoons of breadcrumbs.

4. Form and Coat the Meatballs

With slightly damp hands, roll the mixture into small, walnut-sized balls. Pass each ball through breadcrumbs until evenly coated on all sides.

5. Bake to Golden Perfection

Arrange the meatballs on a baking sheet lined with parchment paper. Drizzle evenly with Extra Virgin Olive Oil. Bake in a preheated oven at 200°C (400°F) for about 20 minutes, turning them halfway through until golden brown and crispy on the outside.

  4. Out of season it is a different dish. I made it in winter with what I could find and it was fine, but not the same. I tried it again in July with proper market vegetables and finally understood what it is supposed to be. Wait if you can.
