At MaMa Florence, we love sharing authentic Tuscan recipes that bring the rich heritage of Italian home cooking straight into your kitchen. Faraona all’arancia (Tuscan Orange Guinea Fowl) is a timeless traditional dish, celebrated for its perfect balance of savory pancetta, aromatic herbs, and citrusy freshness. Whether you are hosting a special dinner party or looking to recreate your favorite culinary memories from Florence, this classic dish is sure to impress!
1 whole guinea fowl, cleaned and cut into pieces
1 red onion
100 g pancetta
1 glass dry white wine
1 sprig fresh rosemary
4 fresh sage leaves
Juice of 1 orange
1/2 orange, thinly sliced
4 tbsp extra virgin olive oil
Salt and black pepper to taste
Preparation:
Rinse the guinea fowl pieces thoroughly under cold running water and set aside. Finely chop the red onion and dice the pancetta.
Sauté the Base:
In a large pan, heat 4 tablespoons of extra virgin olive oil. Add the chopped onion and pancetta, cooking over medium heat for about 15 minutes until the onion becomes soft and translucent.
Add Herbs & Meat:
Add the fresh rosemary sprig, sage leaves, and the guinea fowl pieces into the pan. Season generously with salt and pepper to taste.
Brown & Deglaze:
Sear and brown the meat for about 10 minutes, turning the pieces so they brown evenly. Deglaze the pan with the dry white wine, letting the alcohol evaporate.
Simmer:
Cover the pan with a lid and continue cooking on medium-low heat for 30 minutes, turning the meat occasionally to keep it tender and juicy.
Add Citrus & Finish:
Pour the fresh orange juice into the pan and arrange the thin orange slices over the meat. Turn up the heat to high and cook uncovered for an additional 5 to 6 minutes until the sauce thickens and glazes the meat. Serve warm!
This tender, aromatic dish pairs beautifully with a side of creamy mashed potatoes or roasted seasonal vegetables. We hope this recipe brings a true taste of Florence to your table!
