1l Milk
150g castee sugar
50g Flour 00
4 eggs
Almond paste
Separate the egg yolks from the egg whites.
Set the yolks aside and whip the whites.
Dissolve almond paste in 300 ml milk, add remaining milk.
When the mixture is warm, add 3 egg yolks.
Add the sifted flour, then the whipped egg whites.
Bake (150 g.) for about 40 minutes in a shallow baking dish (about 3 cm.)

Made it twice in one week. Once as written, once with a bit of citrus zest, which I preferred.
The waiting time is not negotiable. I tried to serve it far too early and it simply was not ready. The next day it was beautiful.
We prefer it with something fresh alongside rather than on its own. That is personal taste and not a fault of the recipe, which is very clearly written. The second time I served it with fruit and it was better balanced for us. The rest of the household disagrees and has it exactly as written.
The last stage is quicker than you expect and needs your full attention. Look away and you have missed it, and the recipe does say so.
