Nothing complements a rich, comforting main course like a classic Purè di Patate—the silky, velvety Italian answer to mashed potatoes. Unlike heavier versions, authentic Italian mashed potatoes rely on warm milk, creamy butter, and a gentle hint of freshly grated nutmeg to achieve a light, airy texture that melts in your mouth. At MaMa Florence, this traditional side dish is a cornerstone of our cozy winter and autumn menus, serving as the perfect pairing for rich meats like our signature Faraona all’arancia (Orange Guinea Fowl) or braised meats.
800 g Potatoes (preferably yellow-fleshed or red-skinned)
100 ml Whole milk
60 g Butter (cut into small cubes)
Salt, to taste
Freshly grated nutmeg, to taste
Boil the Potatoes:
Thoroughly wash the potatoes under cold running water to remove any dirt, leaving the skins intact. Place them in a large pot and cover with plenty of cold water. Bring to a boil over medium-high heat and cook for about 30 to 40 minutes after the water begins to boil.
Test for Doneness:
Check if the potatoes are cooked through by piercing the center with a fork. If the tines slide in easily without resistance, they are ready.
Peel & Mash:
Drain the potatoes while they are still hot. Peel them carefully using a paring knife. (Pro-tip: If using a potato ricer, you can place the unpeeled potato inside directly—the ricer will catch the skin inside as you press!) Mash the potatoes directly back into the pot (off the heat).
Incorporate the Butter:
Immediately add the cubed butter to the hot, freshly mashed potatoes. Whisk or stir vigorously with a wooden spoon until the butter is completely melted and smoothly integrated.
Add the Warm Milk:
In a separate small saucepan, heat the whole milk until warm (do not let it boil). Slowly pour the warm milk into the potato mixture in a thin stream, continuously stirring to create a silky consistency.
Whip until Creamy:
Place the pot back over low heat for 2 to 3 minutes. Stir constantly until the mashed potatoes become soft, fluffy, and beautifully creamy.
Season & Serve:
Season with salt to taste and add a pinch of freshly grated nutmeg. Serve piping hot alongside your favorite Tuscan main dish!
