• 125g fresh basil leaves
• 25g whole almonds
• 25g pine-nuts
• 200 ml extra-virgin olive oil
• 50g freshly grated Parmesan
• 50g Pecorino Romano cheese
• 2 garlic cloves
• Salt to taste
• Black pepper, to taste
• Gently wash and dry basil, removing largest stems and stalks.
• Add all the ingredients in a mixer and mix well. Pesto should have creamy consistency.
• Place sauce into a small bowl, add some more extra virgin olive oil to avoid oxidation and allow to rest 15-20 minutes before using.
• When done cooking, drain well your chosen pasta and place into large bowl where you’ve placed the prepared pesto. Blend pasta and pesto well, place onto individual serving dishes.
• If desired, dust with freshly grated Parmesan cheese and serve immediately.

Cooked it following along on a phone in a very small kitchen and never had to scroll back and forth. That matters more than people admit.
Made this for a big group and doubled everything. The proportions scaled fine, my equipment did not, and I ended up splitting it in two halfway through. The two halves came out slightly different, which was oddly interesting. Nobody noticed but me.
It kept in the fridge for four days in a sealed jar with no problem.
Cooked it for eight and most of the work happened the day before, which is exactly what you want when you are hosting.
