There is pasta, and then there is the silky, golden perfection of Fettuccine Alfredo. While known globally, the true secret to this dish lies in the quality of the fresh pasta and the technique of emulsifying butter and Parmigiano Reggiano to create a creamy masterpiece—without using a drop of heavy cream.
During this hands-on class at Mama Florence, you will start from the very beginning: the "fontana" of flour. Under the guidance of our expert chef, you’ll learn to mix, knead, and roll out golden sheets of fresh egg pasta. You will then master the knife skills required to cut perfect ribbons of fettuccine, the ideal canvas for the Alfredo sauce.
Once your pasta is ready, we move to the stove to unlock the secrets of the original Alfredo sauce. You will learn the importance of pasta water, the precise temperature for the butter, and how to toss the pasta to achieve that iconic, velvet-like consistency.
After the hard work is done, you’ll sit down in our beautiful dining room to enjoy your handmade Fettuccine Alfredo, accompanied by local appetizers, a second seasonal course, and perfectly paired Tuscan wines.

Arrive fashionably early to our authentic pasta-making classes! We suggest arriving in comfortable shoes and clothing, as you'll be standing while cooking, 5-10 minutes before class.

Our Cooking Classes Are Great for Kids, Too
Children ages six and up can join our pasta and pizza-making classes with adult supervision. Our authentic Italian cooking classes are great for family bonding and fun.
What to Wear for a Pasta Making Class
For the class, it is important to have long hair tied back and wear comfortable, closed-toe shoes. As the session involves standing and cooking for the majority of the time, it's essential to be at ease during the process. To ensure everyone's safety and proficiency, customers will receive a thorough demonstration of knife skills at the beginning of the class

It is essential that you email us ahead of time with any food allergies or preferences you may have so we can let you know if we can accommodate them. We will not be able to accommodate special dietary needs without notice on-spot because ingredients and setting are prepared in advance.
Yes, all joinable classes are suitable for kids 6 and above as long as they are under parent supervision. Pasta and Pizza classes are the most suitable.
If you are taking a private class we can accommodate also younger children but we will need to know in advance.
