Black Bean Chocolate Cake Recipe

6-8 servings

400 g (14 oz) cooked and drained black beans

3 large eggs

100 g (1/2 cup) raw sugar

3 heaping Tbsp unsweetened cocoa powder

50 g (1/3 cup) dark chocolate 70%, chopped

1 tsp coffee powder

1/2 vanilla pod, scraped (optional)

1 tsp baking powder

Zest from 1 organic orange

A pinch of salt

How to Make your Black Bean Cake

First preheat the oven to 350 °F/175 °C. In a blender combine one egg with the black beans, add some of the cooking water from the beans if needed (not too much) and blend until very smooth. In a large bowl, beat the other two eggs with the sugar then add all other ingredients, except for the dark chocolate. Add the bean puree and mix very well taking care that it is free of any lumps. Now add the chocolate chunks to the batter. Pour the batter into a parchment lined loaf pan, note that the batter should be very runny/liquid.
Bake the cake for approximately 35 min, and set aside to cool completely before removing it from the pan. Keep the cake in the fridge and it will stay moist and delicious for up to 5 days. Serve it straight from the fridge with a topping of sour cream or ice cream and fresh fruit.

Traditional Balsamic Vinegar of Modena at MaMa Florence

At MaMa Florence Cooking School, we believe in using the most authentic and flavorful ingredients possible. One of Italy’s most amazing products is balsamic vinegar, but of course Resident Chef Michele wasn’t content with a supermarket brand. He researched until he found La Ca’ dal Non, a balsamic producer that creates a simply spectacular Traditional Balsamic Vinegar of Modena. Their balsamic vinegar is created from local varieties of grapes from the Modena countryside and follows the strict rules of the Consortium for Traditional Balsamic Vinegar of Modena. The balsamic vinegar is aged and finished for many years (in some cases decades!) in various types of wood barrels according to the ancient traditions and is one of the most important designated regional products of Italy. This traditional Balsamic Vinegar of Modena is created with an extreme amount of care and patience, concentrating the flavors and scents while aging the vinegar in wood barrels. The balsamic vinegar has the perfect balance of acidity and sweetness that makes it the perfect ingredient for some many dishes. During a hands-on cooking class at MaMa Florence Cooking School you are sure to find balsamic vinegar somewhere on your class menu: drizzled over a salad, fruit, cheese or some other creative and delicious use. Keep reading this blog as we will post recipes for you that use Traditional Balsamic Vinegar of Modena, you can even order it in our shop!
