Black Friday MaMa Florence Dessert Recipe

In honor of Black Friday shopping, the MaMa Florence staff are excited to share with you our favorite Black Friday dessert recipe, a wonderful chocolate cake that contains a strange but fantastic ingredient: black beans! Beans add nutrition, rich color and incredible moisture to this delicious Tuscan cake.

Black Bean Chocolate Cake Recipe
6-8 servings

400 g (14 oz) cooked and drained black beans
3 large eggs
100 g (1/2 cup) raw sugar
3 heaping Tbsp unsweetened cocoa powder
50 g (1/3 cup) dark chocolate 70%, chopped
1 tsp coffee powder
1/2 vanilla pod, scraped (optional)
1 tsp baking powder
Zest from 1 organic orange
A pinch of salt

How to Make your Black Bean Cake

First preheat the oven to 350 °F/175 °C. In a blender combine one egg with the black beans, add some of the cooking water from the beans if needed (not too much) and blend until very smooth. In a large bowl, beat the other two eggs with the sugar then add all other ingredients, except for the dark chocolate. Add the bean puree and mix very well taking care that it is free of any lumps. Now add the chocolate chunks to the batter. Pour the batter into a parchment lined loaf pan, note that the batter should be very runny/liquid.
Bake the cake for approximately 35 min, and set aside to cool completely before removing it from the pan. Keep the cake in the fridge and it will stay moist
