Long gone are the days when a few sad vegetables played second fiddle to meat dishes; today vegetables are the stars, taking a leading role in appetizers to main dishes. Their incredible variety, intense flavors and beautiful colors make for creative, healthy, sustainable and and delicious dishes. Now chefs can get their inspiration directly in the fields and markets, presenting gourmet dishes in any season.
Vitamins, minerals, fiber, antioxidants....need we say more? When vegetables are fresh and seasonal and prepared correctly, the nutritional benefit is unbelievable. If you are taking a vegetarian cooking class you probably already are accustomed to using vegetables in the kitchen and this course will help you learn even more dishes to include into your rotation. If you have limited experience with vegetables, a vegetarian cooking class is a great way to learn to introduce more vegetables into your diet while ensuring delicious flavors and filling dishes.

Tuscan Spring Cooking Class Program
The Tuscan Spring Cooking Class is a vegetarian cooking class focusing on the vegetable garden, the fields, and orchards of Tuscany. Our menu selection will be strictly seasonal and locally Tuscan. Together during your spring cooking class we will prepare green crostini (the Tuscan bruschetta), handmade pasta with a vegetable sauce, delicious, soft ricotta making its special seasonal appearance as the sheep graze on fresh grass in the fields. We will taste the freshest and most tender ingredients that the Tuscan spring offers. On the menu you might also find asparagus cooked al dente to keep their nutritional properties, intact, fresh greens and sprouts, crunchy chives, spicy rucola, crisp radishes, and fragrant strawberries and cherries.
