FLORENCE'S UNEXPECTED LOVE OF SEAFOOD | BACCALA’ - SALTED COD

Baccalà, or salted code, brings up poignant and individual recollections for most Florentines. Just about everyone here can conjur up a memory of each delicatessen, bakery and small grocery shop displaying a tall metal water bath laden with white cod fillets.  This fish,  brined in sea salt to preserve its delicate flavor, was the basis of many a Friday lunch in Florentine homes.
Baccalà is actually a fillet of fresh cod preserved and dried with a heavy coating of sea salt. To cook and prepare this fish, the cod needs to be soaked in a fresh water bath for 24-48 hours to remove the salt brine. The Tuscan preparations of this fish are many, as they are throughout the entire country. In fact, with every 100km you travel in Italy, you’ll find a range of unique ways to prepare this versatile fish.
Florence offers its most commonly-prepared version, Baccalà Florentine-style as one of the most classic seafood-based dishes in its repertoire of fish courses.

Although the seaside is not immediately located within Florence’s hillside city center, seafood and fresh fish has always maintained a beloved role within Florentine culinary traditions. Under your chef’s expert guidance, you’ll learn secrets of how to recognize the freshest seafood when selecting at your grocer’s seafood selections, how to properly and masterfully clean fresh seafood and fish, and perhaps most importantly, how to cook this wonderful ingredient using simple, straight-forward methods guaranteed to produce an end result appealing to everyone at lucky enough to be included at your table. Florentine-style salted cod and Squid with local greens are classic Florentine dishes prepared by decades of home chefs and sophisticated restaurant kitchens, and dishes that you will add to your culinary know-how by the end of this course. Your chef will also guide you through the preparation of additional dishes resulting in your expanded knowledge of how to prepare fresh fish and seafood in a classic, straightforward manner. Your end result will be an expanded knowledge of traditional Tuscan seafood and fresh fish recipes that will wow both your palate and your audience! During your delicious course, each participant will prepare fish and seafood based dishes - in order to maintain the nutritional and flavor balance of your meal, your chef will also show you how to prepare and execute a complete seafood and fish-based menu to repeat and recreate from the comfort of your own kitchen. JOINABLE CLASSES RUN FOR A MINIMUM OF 3 PEOPLE.
Should the minimum not be reached for the day you selected, you will be given the choice to pay an additional fee for a private class, change your date to another day, or be fully refunded.  Sunday courses have a minimum enrollment of 5 people for course activation.

Note that because we only use fresh, seasonal ingredients from local suppliers and farms the menu will vary depending on what we find that day! We will send you the weekly menu when you book the class.
