Nothing is truer than this: every Italian region and every season is good for baking in Italy, and the variety of Italian savory baked goods is truly staggering. Focaccia, schiacciata, torta salata, crostata come with different names: erbazzone, scarpaccia, pasqualina, casatiello, sa panada, and contain a multitude of different fillings. From vegetables, chards and ricotta to boiled eggs, salami and cheese, Italian savory baked goods have always amazing flavours and intriguing stories to tell. In addition to our most famous baked good, our beloved pizza, Italy has plenty of delicious baked pies you can't miss.

WE ♥ CROSTATA!
Crostata is one of the most common and beloved Italian baked tart, a "rustic free-form version of an open fruit tart" that may also be baked in a pie plate. It can be both sweet and savoury: the sweet ones usually call for custard, fresh fruit, chocolate and ricotta, and fruit jams. Crostata is usually served as a dessert or as an afternoon snack.
Ingredients for a savoury crostata may include meat, fish, or vegetables mixed with eggs, cheese, and cream. These tortes are served as a main dish or as a lovely finger food.
The name derives from the Latin word crustata, the feminine past participle of crustare (to encrust), and ultimately from the noun crusta (crust). The word crostata appeared in the earliest Italian dictionaries, included in the 1612 dictionary Vocabolario degli Accademici della Crusca (compiled from 1591-1608) by the Accademia della Crusca.

Join us to learn how to prepare Italian savory baked goods: crumbly crostatas and pies, soft or dense focaccia breads, light and airy puffy pastry filled and/or topped with seasonal Tuscan vegetables, creamy cheese, fresh herbs and spices! Baked pies and breads are perfect for any part of the meal, from appetizers to main courses and can be prepared in advance. During the "Savory Baked Goods" cooking class we will make several different baked goods, with and without yeast, inspired by regional recipes or Italian festivities traditions. And since we hate food waste, we will provide you with tips on how savory pies could be an intelligent way to transform "what's left in the fridge" into a delicious dish!

Note that because we only use fresh, seasonal ingredients from local suppliers and farms the menu will vary depending on what we find that day! We will send you the weekly menu when you book the class.
