WHAT DOES A FOOD-TASTER DO?

The field of Food Tasting and Testing is one that is rapidly expanding, as major companies are beginning to increase their investments in producing high-quality, fresher offerings to a public that is more aware and informed than ever before on where their food is coming from, and how it is prepared.  The role of sensorial analysis in the field of product development has never played a greater role, and is becoming critical in the success or failure of new products.  While the field of food-tasting is a complex one, requiring formal education in chemical and food science, we're happy to introduce you to this field so you can test the waters informally, and learn more about what makes this field such an interesting one!
By combining a mixture of science and senses, you'll learn all about the food, their components and structure, and any additional information that will be helpful in creating your own recipes and dishes after learning the fundaments at MaMa Florence.  Being a professional food taster will bring you into direct contact with not just new, exciting products released by major food and beverage companies, but will also allow to your enhance and expand upon your love of quality food and wine.

 

Food Tasters in History

Food tasters haven't always been employed solely in the arena of product development. Tasters, also known as testers, were historically used to protect people in power, like emperors, monarchs and leaders. While not a failsafe system, this function has proved so useful that we have modern leaders today who are known for employing food tasters to protect them from any possible danger. While generally relegated to the human form of food-tester, animals have also played a role in protecting people from deliberating-poisoned or otherwise spoilt ingredients. Animals have played a fundamental role in protecting people from Napoleon to Olympic-attendees at the Beijing Olympics. While this position has changed over the years to include a role more aligned with commercial aspects, we have a great debt of gratitude to the food-tasters of history!

PROGRAM | FOOD TASTER COOKING COURSE | FOOD TASTER COOKING CLASS

They say cooking is an art, which is true. To prepare a delicious masterpiece you have to be able to distinguish between good and poor-quality products. A fundamental part of preparing a memorable dining experience is your ability to discern high vs bad-quality products. Your Food Taster Cooking course will help you learn to cook with awareness, and will open your senses so you can learn to trust them. Your course will also help you identify the difference between two apparently similar ingredients. The Food Taster Cooking Class is a fully hands-on class that focuses on the very different results that come from preparing the same dish using very different ingredients with varied levels and quality and varied degrees of quality.
With the direct participation of your food and wine expert, you will prepare an assortment of local Tuscan bruschetta with a range of locally-sourced Extra-virgin Olive oils. Your learning experience will also include delicious handmade Parmigiana with two types of local mozzarella.  With your expert’s assistance, you’ll taste the reshest and most delicious Italian ingredients, and compare these tastes and sensations with the “ wannabe delicious” ingredients. Also included in your daily menu will be seasonal vegetables and local produce cooked al dente to maintain nutritional properties. You’ll have the chance to taste and cook the same ingredients using a variety of different techniques that will impart a different flavor and consistency to the same foundation ingredients.
Your Food Taster Cooking Class will begin with a in-depth lesson on a sensorial analysis of food, some of which will be featured in your cooking course. You will also enjoy a brief, introductory crash-course on
how to taste Tuscan wine, locally-produced extra-virgin olive oil, chocolate and Balsamic vinegar.

JOINABLE CLASSES RUN FOR A MINIMUM OF 3 PEOPLE.
Should the minimum not be reached for the day you selected, you will be given the choice to pay an additional fee for a private class, change your date to another day, or be fully refunded.

Note that because we only use fresh, seasonal ingredients from local suppliers and farms the menu will vary depending on what we find that day! We will send you the weekly menu when you book the class.
