Yellow foods influence your mood by promoting positive energy, optimism, friendship, openness, and communication. Use of this color has proven to provide a general increase in intelligence, and in chromotherapy, yellow-colored light radiations helps the body's motor mechanisms, fortifying the body's muscles and maintenance of the digestive functions.
The color of yellow-orange vegetables is due to the presence of carotenoids, mainly beta-carotene, which turns into vitamin A, and supports healthy eyes, reduces the risk of tumors and heart disease, is a potent anti-oxidant and has anti-inflammatory and anti-aging benefits. Vegetables of a yellow-orange color contain also lycopene, flavonoids, potassium, and vitamin B and C.
During MaMa Florence's Shades of Yellow cooking class, we will discuss the main characteristics of each ingredient and the best way to bring them together to create an exquisite and healthy summer menu.
YELLOW AS A PIENNOLO TOMATO!
Did you know that the original color of tomatoes was yellow? That's also why in Italian, tomatoes are called "pomodori," which means "golden apple." Nowadays yellow tomatoes are rare, but in Italy we still cultivate the Yellow Piennolo Tomato. This tomato is a variety that is grown from an ancient seed that risked extinction and survived thanks to the Camaldolese monks of Nola, in Piennolo Vesuviano area, close to the world-famous Mt. Vesuvius. These small, sunshine-colored cherry tomatoes grow in the rocky terrain of Mt. Vesuvius National Park. Harvested by hand, "pomodorini gialli del Piennolo" provide a unique concentration of vitamins - up to 3 times more than their red cousins - and thanks to the vulcanic soil, are full of minerals. Another distinctive characteristic of these yellow vine tomatoes is their thick skin, whichi s a result of the absence of additional irrigation during the growing process.

At MaMa we put great emphasis on balancing the palette of colors that nature gives us, and we pay much attention to preserving the health benefits of yellow-colored ingredients by adopting the best cooking techniques per ingredient.
Summer gives us plenty of yellow fruits and vegetables: squash, carrot, yellow pepper, sweet corn, rutabaga, yellow tomato, sweet potato, yellow apple, peach, apricot, loquat, cantaloupe, grapefruit, orange, lemon, mandarin, clementine, mango, papaya, pineapple, persimmon, yellow kiwi... shall we go on?

JOINABLE CLASSES RUN FOR A MINIMUM OF 3 PEOPLE.
Should the minimum not be reached for the day you selected, you will be given the choice to pay an additional fee for a private class, change your date to another day, or be fully refunded. Sunday courses have a minimum enrollment of 5 people for course activation.
Note that because we only use fresh, seasonal ingredients from local suppliers and farms the menu will vary depending on what we find that day! We will send you the weekly menu when you book the class.
