WHO'S WHO | MARIA AND NATASCIA

Natascia Santandrea and Maria Probst are the two faces behind La Tenda Rossa restaurant in Cerbaia in Val di Pesa (FI).
Natascia is the owner of La Tenda Rossa and was raised in the restaurant. Now, Natascia is responsible for the hospitality and historic wine cellar. Maria is the head chef; she was born in Traunstein, Germany, and began her culinary experience in a small butcher shop. From focusing on meat, she moved to Alsazia to work with cheese, then to Maiorca where she worked in St. Regis Mardavall Mallorca Resort with the famous restaurant of Eckhart Witzigmann and then at the Rosa Alpina in San Cassiano in Alta Badia, before arriving to La Tenda Rossa. Maria can be found behind the scenes preparing the restaurant's delicious dishes with seasonal and fresh ingredients that incorporate classic and modern Italian cuisine, and which define the menu at La Tenda Rossa.

Maria's recipes | From her lesson on pasta dishes at MaMa Florence 
"Eliche" pasta* with fennel seeds and wood pigeon ragout

Ingredients (serves 4)
Eliche (Spiral pasta), 320 g/ 11,5oz
wood pigeons, 2
fresh aromatic herbs (basil, parsley, thyme, bay leaves and fennel)
fresh rosemary, 1 sprig
small onion, chopped 1
extra virgin olive oil, 100 g/ 4oz
parmesan cheese aged 24 months, grated 1tbsp
fennel seeds, crushed 1tsp
salt and peppercorns to taste

Instructions:

Debone the pigeons, place the whole bird in a saucepan on high heat with water, together with the bouquet of aromatic herbs, chopped onion, peppercorns and cook for about 20 mins. Remove the meat and strain the broth. Chop the pigeon meat in coarse chunks and brown over high heat in a pan with extra virgin olive oil, 1 teaspoon chopped rosemary, salt and pepper and a glass of the broth and let it simmer until reduced. Cook the pasta in the boiling water, when it is "al dente" drain it and add to the pan, blending it with the pigeon sauce. Serve your eliche, topping each dish with the spoon of Parmesan and fennel seeds, and finish with a trickle of EVOO.
