La Cenerata | An ancient method of using ashes to cook
La cenerata is a process of filtration of ash using a piece of cloth and hot or boiling hot water, to extract the carbonates present in the ash, in particular sodium carbonate. The procedure of filtration is done the night before you will be cooking dried chickpeas, letting the filtrated water go directly on the dried chickpeas for them to soak in. The next morning, the chickpeas are washed, the outer skin or peel is removed by hand and then they are covered with water to boil.
After this overnight soaking in sodium carbonate, the chickpeas are softer and much quicker to cook!

Pasta with chickpeas
Ingredients (serv. 4)
280grams of pasta (such as mischiato delicato or a medium length pasta of your choosing)
300grams of chickpeas, cooked
1 spoonful of tomato paste
1 clove of garlic
1 branch of rosemary
Italian extra virgin olive oil
In a medium size pot, lighly sautè the garlic clove and rosemary in a few spoonfuls of extra virgin olive oil. Add the chickpeas and cover completely with water. Bring almost to a boil and add salt to taste. Turn off flame, set apart 4 tablespoons of whole chickpeas and remove the garlic and rosemary and then blend the rest with an immersion blender until creamy smooth.
In a separate large pot, fill with water and bring to boil. Cook the pasta half way. Drain the pasta and add it to the chickpea cream and cook until al dente. Add back in the whole chickpeas and add salt and pepper as necessary. Upon serving, drizzle with extra virgin olive oil and add a few rosemary flowers as decoration on top.

Valeria Piccini is an incredible Michelin-starred Master chef, a veritable icon in Italian contemporary cooking. Her style is precise and intense, with incredible attention paid to selection of ingredients and inspiration from the surrounding countryside and its incredible products. Valeria is a master at preparation and cooking of red meat, fowl, reductions, bread and puff pastry among many other things. She relies on the classics but also uses great innovation in the kitchen and isn't afraid to experiment.
Valeria will be hosting a series of 4 separate classes on different dates in the MaMa Florence kitchen. During the series of four separate cooking classes Valeria will include an appetizer, pasta or rice first dish, meat or fish main dish and a dessert selected with seasonal ingredients to form a high-end complete menu. Each class will be unique so you can complete the series of four and learn an entirely new menu each time. Participants can choose to select a single cooking class or do all four cooking classes at a special price (see below).
