Originally from the Marche region, Beatrice Segoni is a true Florentine at heart and has made a place for herself and her staff of women in this city. An expert on fish, she creates amazing and intense fish dishes. When arriving at MaMa Florence with her delicious ingredients from the fish markets of the Adriatic, she brings a fresh gust of sea air!
But Beatrice is also an incredible master of fried dishes:  whether it be battered, deep fried or tempura style, in her restaurant Konnubio there is always at least a delicious fried dish worth a taste!
Participants at a MaMa Florence cooking class with Beatrice Segoni might learn the secrets to creating her renowned fried fish, both flavorful and light, that has been on the menu at the Konnubio throughout the course of her tenure there due to its incredible popularity.
 

 

Beatrice's recipes | From her lesson on pasta dishes at MaMa Florence 
"Calamarata" pasta* with Rabbit Meatballs and Sauce

Ingredients (serv. 4)
rabbit, deboned 1
garlic cloves, 2
rosemary, to taste
dry white wine, 1/2 glass
"Taggiasche" olives, 1tbsp
Cherry tomatoes
Meat broth
"Calamarata" pasta* (calamari shaped pasta or other similar one), 320 g/ 11,5oz
Extra virgin olive oil
Salt and black pepper

Instructions
Chop the rabbit into medium sized pieces. Place a few tablespoons of olive oil in a sautè pan, add a little rosemary and garlic and lightly sautè before adding the rabbit and browning evenly on all sides. Add a dash of white wine, let it cook off and then add olives and tomatoes.  Add meat broth and cook well, adjusting with salt and pepper to taste. When cooked through, turn off the flame and remove the pieces of rabbit, and place into food processor to grind.  Shape into small meatballs that you will  then bread and deep-fry.
In blender, mix the sauce that is left over from cooking the rabbit. Cook the pasta in salted boiling water, when it is "al dente" drain it and add to the pan, combining it with the blended sauce.  
Serve your calamarata topping each dish with the fried rabbit meatballs and finish with a trickle of evoo oil.

Now she started a new adventure with MaMa Florence cooking school, where she is eager to share her skills with our cooking class participants!
Beatrice's cooking class menus include the most important classic elements of Italian cuisine, revisited to incorporate her artistic flare and sense of color from her days as a designer. During the series of four separate cooking classes Beatrice will include an appetizer, pasta or rice first dish, meat or fish main dish and a dessert selected with seasonal ingredients to form a high-end complete menu.
